Ingredients
- 180 gPaneer, use fresh, firm paneer
- 150 gCooked quinoa, warm or at room temperature
- 1/2Bell pepper, remove seeds and cut as directed
- 60 gGreek yogurt, plain and unsweetened
- 1 tspTikka spices
- 1 tspOil
- 1/4 tsp, or to tasteSalt
- 1/2Lemon, cut into wedges or squeezed for juice
- 1 tbspFresh coriander, finely chopped
Contains: milk.
Method
- In a bowl, mix the Greek yogurt with 1 tsp tikka spices and a pinch of salt to make the marinade.
- Cut the paneer into cubes and the bell pepper into chunks, then add both to the marinade and toss to coat evenly. Let sit for 10 minutes.
- Heat 1 tsp oil in a pan or grill pan over medium-high heat.
- Add the marinated paneer and pepper, and cook for 6 to 8 minutes, turning occasionally, until lightly charred on the edges.
- Spoon the cooked quinoa into a bowl and top with the tikka paneer and peppers.
- Finish with a squeeze of lemon and a scatter of fresh herbs before serving.
