Ingredients
- 200 gPaneer, crumbled with clean fingers or a fork
- 1 small (about 70 g)Onion, finely chopped
- 1 medium (about 100 g)Tomato, finely chopped
- 2 slicesWhole-grain bread
- 1/2 tspGaram masala
- 1 tbspOil
- 1/4 tsp, or to tasteSalt

Method
- Crumble the paneer into small, even pieces. Finely chop the onion and tomato so they cook quickly and evenly.
- Heat the oil in a wide pan over medium heat for about 30 seconds, until it looks fluid and lightly shimmers.
- Add the onion. Cook for 3 to 4 minutes, stirring every 30 seconds, until soft and translucent; it should not turn dark brown.
- Add the tomato and garam masala. Cook on medium heat for 4 to 5 minutes, pressing the tomato with the back of a spatula, until it is mushy and its raw smell has disappeared.
- Add the crumbled paneer and salt. Stir gently for 2 to 3 minutes on medium-low heat until the paneer is hot throughout; stop while it is still moist, because longer cooking makes it dry.
- Toast the bread until both sides are golden and crisp.
- Serve the warm paneer bhurji beside the toast.
